In restaurant jargon, the word Marcha refers to the moment when a dish or order begins to be prepared. When a chef or cook says (or probably yells) "maaaaaaaarcha" in the kitchen, they are indicating that the mentioned dish needs to start being prepared immediately. It's an instruction for the cooks to start working on a specific order so that it is ready in time to be served.

This was the main inspiration for the name of this Mediterranean restaurant located in the heart of Bogotá, inside the Botero Museum, an emblematic and historic place in the city. Through color, type, and illustration, the brand expresses a playful and personable character. There is a pleasant contrast between the tall, robust, and precise lines of type and the more playful interventions in the first, center, and last letters, reflecting the balance that coexists in a kitchen, where every dish is prepared in a coordinated "marcha," composed of all the tiny, separate moments that need to happen for a dish to reach the table on time.
